The grapes are harvested manually, going through the pre-fermentative maceration process for a period of four days. Spontaneous malolactic fermentation occurs. The wine ages in stainless steel tanks.

** About the winery: **
Chilean winery Odfjell has a curious history, which looks more like a fairy tale. Nearly 30 years ago, Norwegian ship owner Dan Odfjell, visiting Chile, fell in love with the sunny lands of the Maipo and Maule valleys. This passion has resulted in one of the most praised projects of Chilean wine today. To conceive it, Dan Odfjell attracted a brilliant team, made up of winemakers Paul Hobbs, from California, and Arnaud Hereu, from Bordeaux, and wine grower Arturo Labbe, from Chile. In 1994, the first vineyards were planted on the property in Vale do Maipo. Odfjell owns a total of 115 hectares of vineyards, with 85 hectares in Maipo and the remainder distributed between Cauquenes, Lontué and Colchagua. Among the chosen varieties are Cabernet Sauvignon, Merlot, Carménère, Syrah, Cabernet Franc, Malbec and old Carignan vineyards. The work in the field follows the organic booklet, but the concepts of biodynamics have already been adopted by the winery. Vinification takes place by gravity, which helps to preserve the most authentic aromas of the grape. Currently, Odfjell Vineyards is under the command of Dan's two sons - Laurence and Dan Jr. - with Arnaud Hereu remaining as chief winemaker and Sebastián Bustamante acting as head of viticulture.
